Chef Seien Raugei developed this dish on the occasion of a dinner at her house in honor of an important customer of her husband. Because she knew that he enjoyed grilled vegetables and mozzarella cheese, she came up with this healthy combination that has been very successful over the years.
WINE PAIRINGS
We suggest a young wine that will not overpower this delicate combination.
Chianti, Pinot Noir and even Beaujolais will best enhance the flavor of the grilled eggplant.
