HISTORICAL NOTE
This is one of the most typical Florentine dishes dating back to the Medici family during the Renaissance. A very elaborate meat sauce that is pan sautee with the penne pasta is the key to this recipe. Although it is a fairly simple dish, Penne Strascicate is a very tough test for any Italian chef.

Medium bodied Chianti Riserva, Brunello or Carmignano are the perfect complement to this dish.
