Home made dough filled with mozzarella, pepperoni and tomato sauce. Another variation features spinach, ricotta cheese and pinenuts.
HISTORICAL NOTE
Chef Seien Raugei developed this dish for the away-games snacks of her son’s high school soccer team. The tradition continued with her daughter’s lacrosse away-games a few years later. Everybody loved Pepperoni Bread so much that she finally decided to include it in her menu. It continues to be a big hit...
WINE PAIRINGS
The original version with pepperoni is fairly spicy; therefore we can recommend medium bodied wines such as Merlot, Dolcetto and even young Sirah.
